It's a Stag Beetle larva. Stag Beetles belong to the beetle family Lucanidae. This family includes some truly spectacular beetles, including gold and green ones. Even the brown ones are interesting, with the enlarged mandibles that look a bit like deer antlers earn them their common name of 'stag beetle'.

I can't identify your grub to species level, but will confirm it as a Lucanidae. It may be that one of our insect experts is able to identify it in more detail later on.
